Lemon Lavender Almond Cookies | Vegan and Gluten Free Recipe
This is an easy and delicious recipe for Lemon Lavender Almond Cookies. No eggs, no butter, and no leftovers! These chewy and lightly sweet lemon cookies are completely vegan, and gluten free! Don’t miss out on some of the best vegan cookies ever!
Lemon Lavender Almond Cookie Ingredients:
2 cups almond flour
1/2 tsp baking soda
1/4 tsp salt
4 tsp cold pressed coconut oil (melted) *cold pressed retains more flavor and doesn’t contain any additives.
2 tsp vanilla
2 tsp culinarily grade lavender crushed
1 tsp raw sugar
1 lemon zested
1-2 drops lavender essential oil *be sure to use pure oil without fillers. The label “supplement” for means it is safe for ingestion.
6 Tb pure maple syrup
How to make lemon lavender almond cookies:
1) In a separate bowl crush the lavender with raw sugar and zest
2) Combine with all ingredients in large bowl. Mix well.
3) Scoop out tablespoon size cookies onto baking sheet lined with parchment paper.
4) Bake @350F for 9-10 minutes until slightly golden. Enjoy!
*You could also make the recipe with just the lavender or just the lavender oil.
