Grilled Tofu Recipe: Pineapple Tofu Skewers

Healthy vegetarian and vegan tofu recipe! Grilled tofu skewers with pineapple marinade!

Here’s a little dinner inspiration! This grilled tofu recipe is the perfect addition to your vegetarian meal prep. With a delicious pineapple tofu marinade recipe included, your palate will thank you for the burst of flavor in every bite. It’s super easy and one of the most flavorful vegan dinner dishes we’ve had lately!

You can also cook these tofu skewers on a griddle/pan so either way it’s worth a save!

Serves 4 skewers

Grilled Tofu Recipe Ingredients:

Extra firm tofu (drain if needed)
Red bell pepper
Yellow bell pepper
1/2 tsp. garlic paste
1/2 tsp. ginger paste 
Some skewer sticks

Pineapple Tofu Marinade Ingredients:

2 tbsps. almond milk
1 tbsp. almond butter (or any nut butter)
1 tbsp. tamari
1 tbsp. maple syrup
1/2 tbsp. lime juice 
1 tsp. sriracha

How To Make This Grilled Tofu Recipe:

  1. Chop your tofu, peppers, pineapple and zucchini into chunks and assemble along the skewers.

  2. Mix the marinade ingredients in a bowl, brush some of the mixture over the skewers and place on the bbq. turning them often until slightly browned on all sides.**

  3. Heat some oil in a pan and add your garlic and ginger. Cook for a minute or so before adding the rest of the marinade and a splash of water. Heat until the sauce has thickened.

  4. Brush the remaining marinade on the skewers once ready to serve

  5. Serve with rice and salad = SO.MUCH.YUM!

** if cooking the skewers on a griddle/pan make sure you cut the tofu, pineapple and veg into equal cubes so it can brown evenly, add a drizzle of oil to the pan and turn until cooked on all sides**

You can double up on the marinade ingredients if you like but I found with a splash of water it was just enough
