40 lbs - 4 Books - and 0 Inflammation

Say hi to Jen! She started Keto about 4 years ago and it has completely changed her life in more ways than she could have imagined.

“I was looking for a way to help combat the inflammation issues I have from 2 autoimmune disorders, psoriatic arthritis and psoriasis.The first thing I did was throw away all of the carby food in my house, I didn't want to be tempted late at night and have those foods right there. I was hungrier in the beginning than once ketosis kicked in, but overall I just stayed hydrated and ate keto-friendly food when I was hungry.”

She lost 40lbs, and while that’s beyond impressive, she’s more grateful for all of the other health benefits she experienced. 

“I have been able to better control my inflammation issues, which has been the biggest benefit for me. Additionally my quality of sleep is better, my skin looks better, and I feel full of energy.”

Jen started an instagram account to keep herself accountable, little did she know that it would lead to becoming the author of 4 Keto cookbooks.

“Then I started a blog because writing out recipes in IG captions was too annoying lol. Then I got a phone call asking me to write a keto cookbook, which was something I had never thought of in my wildest dreams.”

She wants to give back by sharing with other’s that eating Keto doesn’t need to be complicated, and by making people aware of the various benefits beyond just weight loss. Her biggest piece of advice for staying motivated is:

“It is imperative that you know your WHY in order to stay committed to keto (or anything really). For me it's health and fighting inflammation, so when I need to re-motivate myself I always go back to that.”
